French Shad Loire Recipe
Ingredients 2lb (900g) Shad fillets 3 cups Sorrel leaves, cooked 1/2 tsp Salt 1/4 tsp Ground Pepper 3/4 cup Olive Oil 3 tbsp Butter 3 tbsp Lemon juice 6 Eggs, hard boiled 1 Lemon, thinly sliced Method Brush the shad with oil and season. Grill for 2-3 minutes on each side. Place the sorrel in a greased ovenproof dish. Now place the shad on top. Dot with butter and sprinkle with lemon juice. Bake at 375 degrees for 5 minutes.
