French Fish Meuniere Recipe
Ingredients 1lb 8oz (675g) Sole fillets 1 tsp Salt 1/2 tsp Pepper 1/4 cup Flour 4 tbsp Butter a few drops of Lemon juice 1 tbsp Chopped parsley Method Coat fish is seasoned flour. In large heavy pan heat two tbsp butter until lightly brown. Add fish, leaving a little space between pieces so they do not touch. Lower heat. Cook over very low heat for 5 minutes. Turn fish and cook for 5 minutes on the other side. Remove fish to heated serving dish and keep warm. Add 2 tbsp butter to pan and cook until butter is slightly browned. Sprinkle fish with lemon juice and parsley. Pour butter from pan over fish. Serve very hot. Cooks Comments and Tips . |
