French Fish Fillets Le Havre Recipe
Ingredients 1lb 8oz (675g) Fish fillets 1/2 tsp Salt 1/4 tsp Pepper 2 tbsp Paprika 1/4 cup Flour 3 tbsp Butter 2 tbsp Whiskey 2 tbsp double cream 2 tbsp Bottled clam juice 2 tbsp Lemon juice Method Salt and pepper fillets. coat with paprika and then with flour. In large, heavy pan, heat 2 tbsp butter. Add fillets and cook 5 minutes on each side. Remove fillets to heated serving dish and keep warm. Pour fat off pan. Add whiskey to pan and ignite. Lower heat. Add cream and clam juice and cook for 3 minutes. Take pan off heat. Add lemon juice and remaining butter, cut into small pieces, stirring constantly until well blended. Pour sauce over fillets.
