French Fish Cote-dazur Recipe
Ingredients 1 tbsp Olive oil 1lb 8oz (675g) Fish steaks 4 Tomatoes, peeled and quartered 1 pinch Fennel seed 1 pinch Thyme 1 small Bay leaf 1/2 Garlic clove, crushed 4 Peppercorns 1/2 tsp Salt 1/4 tsp Saffron 1 cup Dry white wine 1 Lemon Method Oil a large pan. Place fish in pan. Add tomatoes, fennel, thyme, bay leaf, garlic, peppercorns, salt, and saffron. Add wine. Bring to boil. Cover and simmer for 10 minutes, or until fish is well cooked but still firm. Serve garnished with lemon. Cooks Comments and Tips . |
