Recipe for French Fish Cocote Recipe

Ingredients

2lb (900g) Swordfish or tuna

3 tbsp Butter

2lb (900g) Small white onions

1 cup white wine

1 tsp Salt

1 Bay leaf

1 pinch Pepper

1 pinch Thyme

Method

In a large heavy saucepan add 1 tbsp flour to 2 tbsp melted butter and blend.

Add fish and onions, and cook until fish is well browned on all sides.

Add wine, salt, pepper, bay leaf, and thyme.

Bring to boil.

Cover and simmer for 40 minutes.

Remove fish to heated serving dish and keep warm.

Blend together the remaining butter and flour, and add mixture to pan.

Cook for a few seconds until sauce thickens and pour over fish.

Serve hot with seasonal vegetables.
