French Piperade Recipe
Ingredients 4 slices Bacon, cut in small pieces 1 large Onion, sliced 4 slices bacon, cut in small pieces 4 Green peppers, cut 1/2" wide strips 28 ounces Tomatoes tinned, drained and mashed 1 Garlic clove, crushed 1/2 tsp Salt 1/4 tsp Freshly ground pepper 2 tbsp Fresh bread crumbs 1 tbsp Butter 8 Eggs, slightly beaten 4 slices French bread, fried in butter Method Heat bacon in large, heavy pan. Add onions and cook until they become transparent. Add bacon, peppers, tomatoes, garlic, salt, and pepper. Cook for 30 minutes, stirring occasionally. Add bread crumbs and continue cooking for 15 minutes. In another heavy pan, heat butter. Add eggs and cook briskly, stirring gently with a fork, until eggs are set. Stir in mixture from other pan.
