Recipe for French Omelet With Chicken Livers Recipe

Ingredients

1 Basic French Omelet Mixture, 1 Egg

1 tbsp Butter

1/2 cup Chicken livers, sliced

2 tbsp Clear chicken broth

1 tbsp Beurre Manie *see below

Basic French Omelet

1 Egg, room temperature

1 tsp Cream

1/4 tsp Salt

1tsp Butter

Method

In small pan, heat butter.

Add chicken livers and cook over brisk heat for 5 minutes, or until livers are browned.

Add chicken broth.

Bring to boil.

Add "Beurre Manie" and continue cooking for 2 minutes, or until sauce thickens.

Meanwhile, make omelet as in "Basic French Omelet.

" Before folding it, place liver mixture in center.

Fold omelet over livers.

To Make the Basic French Omelet

Combine eggs, milk, and salt in bowl and beat gently.

Place butter in pan and heat until butter is very slightly browned.

Add eggs and immediately stir them briskly with back of fork.

When the eggs have thickened and there is no more liquid egg in the pan stop stirring and continue cooking for a few seconds, gently shaking the pan back and forth over the heat.

Take th pan off the heat and with fork fold one-third of omelet over center.

Then fold other third over first.

Slide omelet onto heated serving dish.

Just before serving, rub a piece of butter over the top of the omelet to give it a sheen.

*French omelets are famous for their smoothness and lightness. This is because the eggs are cooked very quickly and remain moist.
