French Omelet Parmentier Recipe
Ingredients 1 Basic French Omelet Mixture, 1 Egg 3 medium Potatoes, boiled and diced 2 tbsp Butter Basic French Omelet 1 Egg, room temperature 1 tsp Cream 1/4 tsp Salt 1tsp Butter Method In heavy pan, heat butter. Add potatoes and cook for 15 minutes, or until potatoes are golden brown. Add potatoes to egg mixture. Now proceed as in "Basic French Omelet". To Cook the Basic French Omelet Place butter in pan and heat until butter is very slightly browned. Add egg Mixture and immediately stir briskly with back of fork. When the egg has thickened and there is no more liquid egg in the pan stop stirring and continue cooking for a few seconds, gently shaking the pan back and forth over the heat. Take th pan off the heat and with fork fold one-third of omelet over center. Then fold other third over first. Slide omelet onto heated serving dish. Just before serving, rub a piece of butter over the top of the omelet to give it a sheen. *French omelets are famous for their smoothness and lightness.
