French Eggs A La Tripe Recipe
Ingredients 8 Hard-boiled eggs 3 tbsp Butter 2 small Onions, finely chopped 2 tbsp Flour 1 cup Scalded milk 1 tsp Salt 1/4 tsp White pepper 1 pinch Grated nutmeg 2 sprigs Parsley Method Melt 2 tbsp butter in small, heavy saucepan. Add onions. Cover and cook over low heat for 20 minutes. Add flour, and cook for 5 minutes, stirring constantly. Do not allow flour to brown. Stir in milk. Add salt, pepper, grated nutmeg, and parsley. Cook over low heat for 15 minutes. Discard parsley. Split eggs lengthwise and add to pan. Continue cooking for 5 minutes.
