French Cheese Souffle Recipe
Ingredients 2 tbsp Butter 2 tbsp Flour 3/4 cup Milk 1/2 tsp Salt 1/4 tsp Freshly ground pepper 1 pinch Grated nutmeg 4 Egg yolks 1 cup Shredded Swiss cheese 5 Egg Whites Method Melt butter in heavy saucepan over low heat. Stir in flour. Add milk, salt, pepper, and nutmeg, stirring constantly until smooth and thickened. Take pan off heat and stir in yolks one at a time. Add cheese. Mix well. Return pan to heat and, stirring constantly, cook over a low heat for 10 minutes, or until cheese is melted. leave to cool slightly. Beat egg whites until they are stiff, and fold them into cheese mixture. Pour batter into a buttered souffle dish. Bake in oven at 375 degrees for 30 minutes. Serve immediately.
