Recipe for Egyptian Moussaka Recipe

Ingredients

Musa''a'a

1 kg eggplant

1/2 kg savoury minced beef * See recipe below

2 cups tomato sauce

pine nuts (optional)

coil oil

Savoury Minced Meat (Lahma mu'assaga)

1/2 kg beef

1 onion, chopped very fine

cooking oil

salt and pepper

Method

Directions for Savoury Minced Meat - Mince the beef coarsely.

Fry the onions until golden, then add beef and seasoning and cook.

For Musa''a'a - Slice eggplant and spread on smooth surface.

Sprinkle with salt, and allow to stand for at least one hour.

Squeeze gently to drain moisture, pat dry, and deep fry the eggplant in sizzling oil.

Then remove onto absorbent paper.

Line the bottom of a baking dish with half the eggplant slices.

Spread savoury minced beef on top, and cover with the remaining half of the eggplant slices.

Season tomato sauce and pour over eggplant.

Bake in center of moderate oven for about 30 minutes.
