Egyptian Apricot Pudding- Mahallibayat Amr Al-din Recipe
Ingredients 1lb Dried Apricots 8oz Sugar 1 tablespoons Cornflour Raisons and blanched almond Method Cut the apricots in small pieces and add four cups of boiling water. Add the sugar, bring to the boil and then simmer. Puree in a blender and then return to the pan and add the cornflour. Boil for a couple of minutes stirring constantly, now simmer for 5 minutes, continuing to stir. When the mixture thickens pour into a dish and decorate with the nuts and raisons.
