Roasted Chicken With Roasted Vegetables Recipe
Ingredients 4 large chicken breasts 750g small new potatoes, halved 2 small red onions, cut into wedges 1 whole bulb of garlic, peeled 2 tbsp olive oil 2 tbsp maple syrup 1 tbsp wholegrain mustard 1 red pepper, cut into chunky pieces 1 green pepper, cut into chunky pieces 1 tsp fresh thyme Method Heat oven to 200C/fan 180C/gas 6. Mix the potatoes, onions, all but 2 garlic cloves and half the oil in a large roasting tin and season. Roast for 15 mins. Meanwhile crush the remaining garlic and mix with the maple syrup, mustard, remaining oil and season. Toss the peppers and thyme with the potatoes, then place the chicken breasts on top and brush with the maple syrup marinade. Roast for about 45-60 mins until the chicken is golden brown and the vegetables are tender. Cooks Comments and Tips . |
