Recipe for Roast Chicken With Lemon And Rosemary Recipe

Ingredients

1 large chicken

1 lemon, halved and zest grated

2 tsp salt

1 tbsp rosemary

Method

Preheat the oven to 200 degrees.

Mix the lemon zest, rosemary and salt.

Rub all over the chicken and under the skin around the cavity.

Place half the lemon inside the cavity.

Place the chicken in the roasting pan upside down and roast for 30 minutes.

Now turn the chicken over and squeeze over the juice from the remaininglemon.

Baste the chicken with the juices and roast for another 30 minutes.

Baste the chicken again and roast for a further 30-40 minutes until the chicken is cooked through.

Remove from the oven and leave to rest for a few minutes before carving.
