Potato Salad With Chicken Recipe
Ingredients 1 medium ready roasted chicken 500g baby new potatoes 150g low-fat yogurt 1 tbsp clear honey 1/4 teaspoon chili powder 2 tbsp fresh tarragon 1/2 jar roasted red peppers, sliced 1 bag mixed salad leaves Method Boil the potatoes for 15-20 mins until tender,drain and leave to cool. Meanwhile, strip the meat off the chicken and cut into cubes. In a large bowl mix together the yogurt, honey, chili powder, tarragon and seasoning to make the dressing. Now toss in the chicken, potatoes and pepper and mix gently with your hands. Serve on a bed of lettuce. Cooks Comments and Tips . |
