Paprika Chicken And Bean Stew Recipe
Ingredients 6 chicken thighs, skinned, boned and cubed olive oil 1 red onion, sliced 2 cloves garlic, crushed 1 tbsp paprika 1 tsp chili powder 1 red pepper, cut into thick strips 1 tin borlotti beans, rinsed and drained 100g chorizo, sliced 4 large tomatoes, chopped 300ml chicken stock 4tbsp fresh coriander, chopped Method Saute the onion and garlic in 1 tbsp olive oil. Add the chicken, chortizo, peppers,paprika and chili powder and fry for a couple of minutes. Add the tomatoes and stock, bring to the boil and simmer, before adding the beans. Cook for about 25 minutes until the stew thickens. Stir in the coriander and with hot bread rolls. Cooks Comments and Tips . |
