Recipe for Pan-fried Chicken With Peas Recipe

Ingredients

4 chicken breasts, skin on

2 tbsp olive oil

25g butter

1 small onion, finely chopped

1 garlic clove, crushed

2 tbsp creamed horseradish

4 tbsp creme fraiche

350g frozen peas

1 cos lettuce, shredded

pinch of sugar

1 tbsp fresh mint, chopped

Method

Brush the chicken with oil and season.

Heat a large frying pan and put the chicken in skin side down.

Fry until the skin is golden and crisp.

Turn the chicken over and fry for a further 5-7 minutes until just cooked, set aside.

Meanwhile, in a separate pan melt the butter and saute the onion and garlic.

Stir in the creamed horseradish and creme fraiche and simmer for 3 minutes.

Add the peas, lettuce and sugar, and adjust the seasoning.

Simmer for 2 minutes until the lettuce has wilted slightly, remove from the heat and sprinkle over the mint.

Serve with the chicken and fries.
