One-pot Baked Chicken Recipe
Ingredients 4 chicken breasts, skin on 4 tbsp olive oil 750g new potatoes, sliced 1 tsp dried thyme 6 cloves garlic, peeled 1 jar roasted peppers 2 oranges, segmented 200g black olives, optional Method Preheat oven to 200 degrees. Heat 2 tbsp of oil in a large frying pan and fry the chicken skin side down for 2-3 minutes. Meanwhile brush the sliced potatoes with oil. Transfer the chicken and potatoes to a large casserole pot. Add the whole garlic cloves and thyme and stir well. Bake in the oven for 40-45 minutes until the potatoes are soft. Add the peppers, orange segments and olives (optional) and bake for another 5-8 minutes ensuring that the chicken is cooked. Cooks Comments and Tips . |
