Recipe for Lemon Chicken With Tarragon Dressing Recipe

Ingredients

1 large chicken

2 lemons

2 tbsp olive oil

1 tbsp clear honey

FOR THE DRESSING

200g creme fraiche

2 tbsp chopped tarragon

zest and juice 1 lemon

Method

Heat oven to 190C/fan 170C/gas 5.

Halve one lemon, rub all over the chicken then put both halves inside the chicken.

Roast the chicken for 1 hour.

Meanwhile, mix the honey, juice and zest from the remaining lemon and oil, and brush all over the chicken.

Now season and return to the oven to roast for a further 30-40 minutes until the chicken is cooked through.

Remove from oven and leave to cool.

DRESSING

Whisk together the creme fraiche, tarragon, lemon juice, oil and seasoning.

Strip the meat from the chicken, chop and mix with the dressing.

Serve on a bed of crisp green salad.
