Chicken Stuffed With Mascarpone Recipe
Ingredients 2 chicken breasts, skin on 3 tbsp mascarpone 1 tbsp rosemary, chopped 1 clove garlic, crushed 4 slices prosciutto 1 tbsp olive oil 1 tbsp dry white wine 1 tbsp leamon juice Method In a small bowl mix the mascarpone, rosemary, garlic and seasoning. With each chicken breast carefully lift the skin but do not detach from the chicken. Put a small amount of the mix under each of the skins. Now wrap each chicken breast with 2 slices of prosciutto to keep the filling in. Heat the olive oil in a large frying pan and brown the chicken on both sides. Transfer to a roasting pan and in a preheated oven at 200 degrees, cook for 20-25 minutes. Add the white wine and lemon juice to the roasting pan and stir into the chicken juices.
