Chicken Stir Fry With Cashew Nuts Recipe
Ingredients 2 chicken breasts, cubed 85g unsalted cashew nuts 1 onion, thinly sliced 2 tbsp vegetable oil 150g baby mangetout 1 red pepper, thinly sliced 250g broccoli florets 1 tbsp soy sauce 2 tsp white wine vinegar 1 orange, juiced 1 tsp brown sugar 2 tsp cornflour Method Heat the oil in a large frying pan. Add the cashews and cook for a minute until golden brown. Remove the nuts and drain on kitchen roll. Add the onion fry for 3-5 minutes until lightly brown and soften, take them out of the pan and set aside. Add the chicken into the pan and fry for 3-4 minutes. Now add the broccoli, mangetout and red pepper and cook the vegetables until the are a little underdone. Return the onion and cashew nuts to the pan. Blend together the soy sauce, vinegar, orange juice, muscovado sugar and cornflour. Pour into the pan and cook for couple of minutes gently stirring. Serve immediately. Cooks Comments and Tips . |
