Chicken Pot With Braised Vegetables Recipe
Ingredients 1 medium chicken 25g butter 200g smked back bacon, chopped 1kg new potatoes, scrubbed 16 small onions 200g frozen peas handful of chives, chopped 1/2 bottle dry white wine Method Preheat the oven to 200 degrees. Season the chicken inside and out. Heat the butter in a large frying pan and brown the chicken all over. Remove the chicken from the pan, then fry the bacon until crisp. Add the potatoes and shallots to the pan and brown. Now transfer to a casserole dish, add the chicken and pour over the wine. Place the casserole in the pre-heated oven and cook for 60-75 minutes,until the chicken is cooked. Remove the chicken and leave to rest. Add the peas to the casserole and return to the oven for 10 minutes. Add the juices from the rested chicken and stir in the chives. Serve the chicken with the succulent buttery vegetables.
