Recipe for Chicken And Mushroom Parcels Recipe

Ingredients

4 chicken breasts, skinned

200g button mushrooms, sliced

handful parsley, chopped

2 cloves garlic, crushed

375g ready rolled puff pastry

4 tbsp olive oil

1 egg, beaten

Method

Preheat the oven to 200 degrees.

Heat half the oil in a frying pan, add the mushrooms and cook for 3 minutes.

Add the parsley and garlic, season and leave to cool.

Meanwhile, unroll the pastry and cut it into four.

Put a chicken breast in the middle of each one.

Brush the chicken breast with the remaining oil and cover with mushrooms mixture.

Wrap the pastry round the chicken to make a parcels.

Coat with the beaten egg and using a fish slice place on a greased baking tray.

Bake for 30-35 minutes until crisp and golden.

Serve with new potatoes and green beans.
