Chicken Grilled With Basil Mayo Recipe
Ingredients 6 chicken thighs, skinned and boned 1/2 red onion, finely sliced 1 ciabata loaf handful of basil, chopped) 30g parmesan, grated 1 Kos lettuce, roughly chopped 4 tbsp mayonnaise white wine vinegar olive oil lemon juice (optional) Method Put the onion in a bowl with 1 tbsp vinegar. Toss and leave to marinate. Cut the ciabatta lengthways. Drizzle with olive oil then bake at 180C for 8-10 minutes until golden Sprinkle over the parmesan and cook for another couple of minutes, cool slightly and cut into croutons. Brush the chicken thighs with olive oil and season well. Heat the grill and cook the thighs until golden brown. Making sure the chicken is cooked thoroughly. Now slice the chicken and leave to cool. Add the mayonnaise to the onion and vinegar then stir in the basil. Arrange the lettuce on a large plate Add the chicken and croutons. Pour over the basil mayo.
