Recipe for Chicken Breast Stuffed Recipe

Ingredients

4 large chicken breasts, boned with skin on

1 onion, chopped

2 cloves garlic, chopped

125g white breadcrumbs

125g pancetta, diced

butter

Method

Heat the oven to 200C/fan 180C/gas 6.

MAKE THE STUFFING

Make the stuffing by blizting the onions, garlic and breadcrumbs in a blender.

Place in a bowl and stir in the pancetta and seasoning.

Melt the butter in a pan, place the chicken breasts in skin side down and cook for 1 minute to slightly brown the skin.

Remove the chicken from the pan and allow to cool.

Reserve the melted butter to brush over the chicken when stuffed.

Cut a pocket in the chicken breasts and fill the pockets with the stuffing.

Now place in a large roasting tin and brush with melted butter.

Season, then put in the oven for about 40 minutes.

Check the chicken are cooked through before serving.
