Recipe for Caesar Chicken Salad Lower Fat Recipe

Ingredients

1 chicken breast, cooked and sliced

1/2 kos lettuce shedded

2 spring onions, sliced

6 tbsp low-fat creme fraiche

1 tsp Dijon mustard

1 tsp Worcestershire sauce

1 clove garlic, crushed

40g parmesan , grated

2 tbsp lemon juice

2 slices ciabatta, cubed for croutons

olive oil

salt

Method

Heat the oven to 200c/fan 180c/gas 6.

Toss the bread with 1 tbsp olive oil and some salt.

Bake for 10-15 minutes until golden.

Mix the creme fraiche, dijon, worcestershire sauce, garlic and parmesan with a squeeze of lemon juice, a little water and seasoning.

Toss the lettuce with half the dressing and top with the chicken, spring onions and croutons.

Drizzle over the rest of the dressing.

Add a few parmesan shavings to finish off.
