Baked Chicken With Artichokes & Lemon Recipe
Ingredients 1 medium chicken 4 globe artichokes, cleaned and quartered 1 onion, cut into chunks 4 cloves garlic, bruised 1 lemon, sliced 250ml white wine olive oil 3 tbsp parsley, chopped Method Put the onion, garlic, lemon and white wine into a casserole dish together with the chicken and season. Add the artichokes and brush with oil. Cook for an hour in a preheated oven at 190 degrees. Take out of the oven and baste with the juices. Return to the oven for about 30 minutes until the chicken is cooked through. Rest for 10 minutes, sprinkle with parsley and serve with new potatoes. Cooks Comments and Tips . |
