Chicken Skewers With Lemon & Thyme Recipe
Ingredients 4 chicken breasts, boned, skinned and cubed 8 wooden skewers 2 lemons, juiced 4 sprigs fresh thyme 2 cloves garlic, crushed olive oil Method Soak the skewers in water for a couple of hours as this will prevent them burning whilst on the BBQ. Mix the lemon juice, thyme sprigs and garlic with 4 tbsp olive oil and plenty of seasoning to make a dressing. Toss the chicken in the marinade and leave refrigerated for at least 1 hour. Thread the chicken pieces onto skewers, reserving any remaining marinade to brush over whilst BBQing. Place the skewers on a hot BBQ, turning and basting until the chicken is cooked through.
