Ingredients

1 Chicken

MARINADE

3 cloves garlic, crushed

2 tbsp freshly ground black pepper

2 limes

2 tbsp dried coriander

Method

Spatchcock the chicken so that it lies flat with the breast side up.

Mix the garlic, pepper and lime juice into a paste.

Put the chicken into a large dish and rub the marinade into the chicken. Now sprinkle with the coriander

Cover and refrigerate for at least an hour.

Cook on a hot BBQ until the chicken is cooked through.
