Thai Chicken Recipe
Ingredients 500g minced chicken 1 tin coconut milk 1 stalk lemon grass, finely chopped 2 red chilies, finely chopped 2 clove garlic, finely chopped 1" cube ginger, grated 2 tbsp fish sauce 3 tbsp lime juice 1 tbsp coriander, chopped coriander leaves to garnish Method In a frying pan gently cook the chicken in coconut milk. Add the garlic, lemongrass, ginger and chili and cook for 4/5 minutes. Take off the heat and stir in the fish sauce and lime juice. Season if necessary.
