Satay Chicken With Salad Recipe
Ingredients 4 chicken thighs, skinned and cubed 2 shallots, finely chopped 1/2 tsp ground coriander 1/2 tsp ground cumin 1/4 tsp turmeric 2 tbsp fish sauce 3 tbsp smooth peanut butter 1/2 cucumber, peeled and thickly sliced
Method In a large bowl mix the shallot, coriander, cumin, turmeric, fish sauce and peanut butter together. Toss in the chicken, mix with your hands and leave refrigerated for 1-2 hours. Thread the chicken onto the skewers, and cook under a hot grill. Serve with a cucumber salad.
