Coconut Chicken With Salad Recipe
Ingredients 2 chicken breasts 1 egg white 4 tbsp shredded coconut 3 tbsp breadcrumbs Cooking oil to deep fry Method Preheat the oven to 200 degrees. Mix the coconut flakes and breadcrumbs, lightly whisk the egg white and season. Slice each chicken breast into three strips. Dip chicken into the egg white and then into the coconut mix. Place on an oiled tray until all the chicken is coated. Deep fry the chicken for about 2-3 minutes and then drain off any excess oil onto kitchen paper. Place on a tray in a hot oven for 4-5 minutes before serving. Serve the chicken with a fresh cucumber salad. Cooks Comments and Tips . |
