Jubilee Chicken Recipe

Recipe for Jubilee Chicken Recipe

Ingredients

600g chicken breast, cooked and cubed

350g cherries, stoned and halved

6 spring onions, finely sliced

mixed salad

DRESSING

1 tbsp korma curry paste

1 tsp clear honey

1 tbsp lemon juice

200g fromage frais

handful fresh mint

Method

DRESSING

Blitz the curry paste, honey, lemon juice, mint and fromage frais in a food processor together with seasoning.

SALAD

Put the chicken, cherries and dressing into a bowl and mix.

Place the mixed salad in a bowl and sprinkle over the spring onions.

Now spoon over the chicken and cherry mixture.

Chill before serving.
