Chicken and Sweetcorn Patties Recipe
Ingredients 3 chicken breasts, minced 1 tbsp olive oil 1 small onion, finely chopped 1 clove garlic, chopped 2 small slices bread 3 tbsp milk 1 egg, beaten 2 tbsp tomato puree 1 tsp Worcestershire sauce 2 tbsp fresh parsley, chopped 1 tbsp fresh thyme, chopped 200g tin sweetcorn, drained SALAD 1 baby lettuce, shredded 1/2 cucumber, cut into chunks 1 red pepper, cut into small chunks plum tomatoes, halved Method Heat the oil in a pan and saute the onion and garlic. Soak the bread in the milk. Put the soaked bread to the chicken, onion, egg, tomato puree, Worcestershire sauce, herbs and seasoning into the food processor. Blitz for a few seconds. Scrape the mixture into a bowl and stir in the sweetcorn. Form into 18 round patties. Fry the patties gently in oil until cooked through and then drain on kitchen paper.
