White Bean Bruschetta

Recipe for White Bean Bruschetta

Ingredients

1 1 x 8 inch (20 cm) baguette, cut into

1 inch ,

1 thick (2.5 cm) slices

1 1 x 15.5 ,

oz ,

1 can cannellini beans, drained and rinsed

2 cloves garlic, minced

1/2 tsp lemon juice

2 tbsp water

Paprika to taste

Salt and pepper to taste

1 large tomato, coarsely chopped

Basil leaves for garnish

Method

1.Preheat oven to 400°F (200°C).

2.Toast bread in oven for 8 to 10 minutes or until lightly browned.

3.Purée beans with garlic, lemon juice and water until smooth.

Adjust seasonings to taste.

4.Spread purée on toast.

Top each with a few pieces of tomato, and garnish with basil leaves.
