Tomato and Fetta Bruschetta
Whenever we have this simple dish it brings back warm and happy memories
of sun soaked summer holidays sitting outside a taverna at the water's edge. Ingredients 8 slices French or Italian bread 8oz small plum or cherry tomatoes, halved 4oz Feta Cheese Olive Oil Dried Oregano 1 Ciabatta Loaf or 4 Ciabatta Rolls Method Slice the bread and lightly toast, sprinkle with oregano and drizzle with olive olive. Now add a layer of tomatoes and crumble over the feta cheese. Garnish with a few basil leaves (optional). Cooks Comments and Tips Remember always use small good quality tomatoes as they have a sweeter more intense flavour. |
