Orange Bread Recipe
Ingredients Peel of 3 oranges 1 tsp. soda Water 1 c. sugar 1 c. water 2 eggs 1 c. sugar 3 1/2 c. all-purpose flour, sifted 2 tsp. baking powder Pinch of salt 1 c. milk 3 tbsp. butter or margarine, melted 1 c. pecans, chopped, floured Method Peel around oranges, cutting skin thin. Cover peel with water and add soda in saucepan. Bring to boil and boil slowly for 15 minutes. Pour off water and rinse with cold water. Drain. Cut peel into thin slivers. Mix cut peel, cup of water and cup of sugar. Cook slowly to a syrup - about the consistency of maple syrup. Put aside to cool. Beat eggs well in a mixing bowl. Beat in sugar until fluffy. Sift flour, baking powder, and salt together and add to eggs and sugar alternately with milk. Add butter and nuts. Add orange syrup and mix well. Bake in greased and floured 9 x 5 x 3 inch loaf pan in 350 degree oven for 1 hour and 15 minutes or until center tests done. Cool in pan for 30 minutes. Turn out on rack and cool completely. Yields: 1 loaf. Slice thin and serve with butter or cream cheese. Cooks Comments and Tips . |
