Ingredients

6 oranges

6 sweet potatoes

5 tablespoons cream

2 tablespoons butter

grated orange peel

orange juice

sugar

Method

Cut the tops off the oranges and with a spoon scrape out all the pulp.

Wash the sweet potatoes and boil in water until soft.

Drain and peel them.

Mash them well with a potato masher.

Add cream and butter, a little grated orange peel, salt, a little orange juice and 2 tablespoons of sugar and heat until fluffy.

Fill the orange cups with this and bake until lightly browned on top.
