Baked Stuffed Potato

Recipe for Baked Stuffed Potato

Ingredients

4 baking potatoes (about 6-8 oz. each)

1/2 c. half & half

1/4 c. shredded Cheddar cheese (about 1 oz.)

2 tbsp. margarine or butter

2 tsp. dried parsley flakes

3/4 tsp. salt

1/4 tsp. pepper

1/4 tsp. dry mustard

1/4 c. shredded Cheddar cheese (about 1 oz.)

1/8 tsp. paprika

Method

1. Bake potatoes as directions.

Cut thin slice from the top of each potato.

Scoop out inside with a spoon, leaving a thin shell.

Add remaining ingredients except 1/4 cup cheese and paprika to potatoes.

Mash until no lumps remain.

2. Scoop 1/4 of the potato mixture into each shell.

Place stuffed potatoes in square baking dish, 8 x 8 inches.

Sprinkle with remaining 1/4 cup cheese and the paprika.

Microwave at medium-high (70%) until cheese is melted and potatoes are heated through, 3-4 minutes.

Makes 4 servings.
