Basic Crispy Potato Skins
Ingredients
6 medium potatoes
2oz melted butter
salt and pepper to season
Method
Preheat oven to 400 degrees.
Scrub potatoes and prick each one several times with a fork.
Bake for approximately 45-50 minutes until tender.
Cut each potato lengthwise in half.
Scoop potato out of the skins leaving a 1/8" thick shell.
Brush skins inside and out with melted butter and season with salt and pepper.
Place skins, skin-side down, on a baking sheet. Bake about 15 minutes until crisp.
Now add your favourite fillings.
Cooks Comments and Tips
A few of my favourite fillings are :-
1. Crispy bacon and cheese
2. Tuna mayo and chopped spring onion
3. Bolognaise sauce with grated parmesan
The possibilities are endless, try a few of your own ideas.
By the way don't waste the scooped out potato as this can be used for another
recipe or even to thicken a soup.
